How to use your Fresh Local Vegetables

Summer is officially here! Let’s talk about this for a moment. This is my favourite season for so many reasons. First and foremost, I love the sunshine that comes with summer. I love the long hours of daylight and the warm weather that inspires us to come out of hibernation and get some vitamin D!

Also, on a very related note, I really enjoy all of the outside activities that come with summer. I’m biking or walking around our neighbourhood almost every single day. It’s become an invigorating routine as a part of my day. When I step outside to get moving, the sluggishness of the morning disappears and the day seems bright and fresh.

Finally, with summer comes fresh and local fruits and vegetables. We have purchased a growers box to get our local produce for the summer and I am psyched! The first box is came our way this week and I can’t wait to put out some seasonal fruit and vegetable recipes for all of you to enjoy! Here is a way to use some of your fresh and local tomatoes and basil!

This week we got some delicious fresh basil and I purchased some BC tomatoes earlier in the week and they were just bursting with juiciness and ready to be eaten. Lastly, my in-laws brought some raw Ontario honey which I was dying to make something delicious with. Keep scrolling down to see my dairy-free take on a Caprese salad.

How to use your Fresh Local Vegetables
 
Ingredients
  • Vine tomatoes
  • Fresh basil leaves
  • 1 tbsp honey
  • ½ cup balsamic vinegar
Instructions
  1. Slice tomatoes to a 1 cm thickness
  2. Layer alternating tomatoes and basil.
  3. Meanwhile, combine honey and balsamic vinegar in a small pot on the stove.
  4. Turn on low to medium heat to heat and reduce the vinegar.
  5. Stir regularly to prevent burning to the pot.
  6. Heat for approximately 10 minutes and let cool, uncovered.
  7. Once the vinegar reduction has cooled, brush or drizzle over the tomatoes and basil.
  8. Enjoy immediately!
